Yemen Style Chicken Kabsa

Ingredients

  • Two cups long grain basmati rice

  • 1 large onion, chopped

  • 1 cinnamon stick

  • 2 bay leaves

  • 7 cardamom pods

  • 10 cloves

  • 1 tbsp grated garlic

  • 1 whole chicken, cut into 6-8 pieces

  • 1 tsp cumin

  • 1 tsp coriander

  • ¼  tsp black pepper

  • 1 tsp paprika or chilli powder 

  • ½  tsp turmeric

  • 1  tbsp salt (or to taste)

  • 2 tbsp tomato paste

  • 2 diced vine tomatoes

  • 3  whole hot peppers or few chilli peppers  

  • Hot water (to cover chicken)

  • 2 tbsp vegetable oil



Instructions:


1. Wash two cups of long grain basmati rice and soak for thirty minutes.

2. Heat a pot over medium heat with a little vegetable oil and stir in the cinnamon stick, bay leaves, cardamom, and cloves until fragrant. 

3. Then, add the onion and sauté until light brown.

4. Add one tablespoon of grated garlic, stirring until fragrant. 

5. Then add the chicken, salt and spices and keep stirring until chicken gets completely coated with spices 

6. Then add tomato paste and stir for a minute or two.  Then add  tomatoes, and hot pepper..

7. Cover the chicken with about two cups of hot water, and let simmer for thirty minutes.

8. Add the soaked rice to the pot, and cook over medium heat until the broth reduces. You may add more hot water if needed. Then place the lid on the pot  and cook over low heat for 20-25 minutes.
