Butter Chicken

Easy Home-Style Butter Chicken

 

 Ingredients

For chicken marinade 

  • 500g (1 pound) chicken (boneless thighs or breast)

  • 1 tbsp ginger-garlic paste

  • 1 tbsp red chili powder 

  • Salt

For gravy

  • 2 tbsp butter

  • 1 small onion chopped 

  • 2 Medium vine tomatoes, blended (or ¾ cup tomato puree)

  • 1 tbsp ginger-garlic paste 

  • ¼ cup cashews.  

  • 1-2 tbsp red chili powder 

  • 3 tbsp heavy cream 

  • ½ tsp garam masala

  • salt to taste

  • Water as needed

 


 Simple Steps

1️⃣ Marinate chicken

Mix spices, salt, and ginger-garlic paste.
Add chicken and rest 30 minutes (even 15 is okay).

2️⃣ Cook chicken

Heat a pan with oil or butter.
Cook chicken until lightly golden and just cooked.
Remove and set aside.

3️⃣ Make gravy (same pan!)

  • Add onions and saute until golden

  • Add ginger-garlic paste, sauté 30 seconds

  • Add tomato puree,  cashews and salt

  • Cook for 20 minutes until sauce is thick and cashews are softer 

  • blend then add back to pan

4️⃣ Finish

  • Add chicken back to pan

  • Add thebutter 

  • Add a little water if thick

  • Simmer 5 minutes

  • Add cream, garam masala

  • Stir gently and turn off heat

🍽️ Serve with

  • Naan or chapati

  • Rice
